Gluten Free Maca Banana Bread (Paleo, GF, DF)

If I had to chose between a cup cake or banana bread, Banana bread would always win! It may be because you can slice as much as you like, whereas with cupcakes more than one seems greedy. Banana bread is also so comforting!

Maca Banana Bread

This recipe is gluten, grain and dairy free, ground almond and desiccated coconut is used in place of flour. However, the replacement flour does not affect the taste. The bread has a nice soft texture, is moist and flavoursome with a subtle hint of maca. I don’t think it is possible for a banana bread to taste bad? Maca Powder

 

Maca powder is an adaptogen, which has a positive effect on your energy and hormone levels. In addition maca is packed with nutrients and antioxidants. Maca contains; magnesium, calcium, potasium, vitamins B1, B2, C & E, copper, zinc, iron, selenium, sulphur and sodium. It also includes over 20 ammino acids, 20 free from fatty acids and is a rich source of phytonutrients.

You can see why I love to add this wonderful herb to my baking. It gives you that extra boost and helps with your stress levels when you need it.

 

Recipe

Banana bread is a perfect snack with a cup of tea, an accompaniment at breakfast or as a pre/post workout meal. For example, pair it with your favourite nut butter, yogurt and blueberries or as a side to an omelette.

Gluten Free Banana Maca Bread

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • 3 medium Banana
  • 1 medium Organic Egg
  • 100 grams Ground Almonds
  • 50 grams Desiccated Coconut
  • 1 tbsp Maca Powder (yellow)
  • 1 pinch Sea salt
  • 1 tsp Baking Soda

Instructions

  1. Pre heat your oven to 180C and grease a loaf tin with coconut oil

  2. Add all ingredients to your food processor

  3. Blend on high until smooth

  4. Pour into your loaf tin

  5. Place into oven and bake for 25-30 minutes

Recipe Notes

N.B. Check bread regularly making sure not to burn. A toothpick should come out clean from the centre when fully baked.
