No-bake Chocolate Cookies (Vegan, GF, DF, Paleo, AIP)

How many times have you found yourself craving chocolate cookies and there’s not one to be seen? If you’re anything like me, often! Well, don’t despair, these no-bake cookies only take a few minutes to prepare and 10 minutes to chill.

Having multiple food intolerance’s, I find breakfast one of the hardest meals of the day. With this in mind, I often find myself stuck on what to eat, as I can’t eat most ‘breakfast’ foods. Generally I need something quick before my morning personal training clients, so cooking chicken breast and veg is out of the question. Because of this, I quite often come up with quick recipes that I can eat straight away. You may also notice from my recipes that I am a no fuss baker or no-bake in most cases.

Surprisingly these little chocolate bites of heaven are so simple to make, and super quick to eat too! I literally looked in my cupboards and threw some ingredients together, moulded them into balls, pressed onto a tray and popped into the fridge. Ten minutes later I had these lovely little cookies which were perfect before I went off to work. Don’t they look great!

The Recipe

The recipe is so simple and contains my baking staples. You may have noticed coconut is a staple in my diet at the moment as luckily I tolerate it very well. Therefore the base of this recipe is coconut, cacao powder for a chocolate flavour and tigernut powder for a cookie crunch. In order to make this recipe AIP friendly just sub the cacao powder with carob, and you have yourself AIP cookies.


No-bake Chocolate Cookies

  • 50 grams Coconut Butter melted
  • 1 tbsp Coconut Oil melted
  • 30 grams Desiccated Coconut
  • 10 grams Cacao Powder use carob if AIP
  • 30 grams Tigernut Powder
  • 1 tsp Maple Syrup
  • 1 dash Sea Salt


  1. Firstly melt the coconut oil and coconut butter together in a pan on a low heat.

  2. Add all ingredients to the melted coconut and stir until combined

  3. Form into balls and press onto a baking tray lined with grease proof paper

  4. Pop into the fridge to firm up for 10 minutes or eat straight away

  5. Enjoy!
