Healthy Decadent Chocolate Truffles (AIP, Paleo, Vegan, GF, DF)

Chocolate truffles are one of the most moreish sweets there is.  Ultimately every bite of soft decadent chocolate is just so delicious. Consequently this making it a problem to stop eating the truffles at just one or two or even three!

Healthy Decadent Chocolate Truffles

These chocolate truffles are a great after dinner dessert or as a weekend treat. Additionally you could even whip up a batch as a gift for a friend or loved one. Of course the best part, they are quick and easy to make. If there are any left you can store in them in the refrigerator for up to a week.

We all know its important to treat yourself now and then, in addition to a healthy diet. What better way than with chocolate truffles that use wholesome nutritious ingredients such as coconut, cacao and tigernuts.

I used cacao powder to make the chocolate, but if you are following an AIP diet you can sub for carob powder. All in all I am so happy with how these turned out. Exactly, or even better than how I remember sugar filled truffles.

Healthy Decadent Chocolate Truffles

AIP, Paleo, GF, DF, V

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 100 grams Coconut Butter
  • 100 grams Soft Medjool Dates
  • 30 grams Tigernut Powder
  • 3 tbsp Cacao Powder (extra for dusting) Sub for carob if AIP
  • 6 tbsp Coconut Milk
  • 2 tbsp Coconut Oil
  • 2 tbp Maple Syrup

Instructions

  1. Add all ingredients into a food processor and blend until smooth

  2. Place truffle mixture into the fridge for 20 minutes to firm up

  3. Once the mixture is firm use a tsp or tbsp to spoon equal amounts into your palm and form into balls

  4. Place all balls onto a plate lined with baking paper and pop back into the fridge for 5 minutes

  5. Remove from fridge and roll in extra cacao/carob powder

  6. Eat straight away or store in the fridge
