These chocolate muffins are the perfect grab and go breakfast or filling snack. With their delicious sweet chocolate flavour and fluffy soft texture, you wouldn’t guess they are dairy, gluten and refined sugar free.
Not only is this recipe a great snack, breakfast and dessert but also the perfect pre or post workout snack for any exercise. They basically can be eaten anytime of day, anywhere, just pop some in your lunchbox or handbag. As they are packed full with complex carbohydrates, protein and fats, you could say they are a well balanced meal.
Each bite is soft, and fluffy with a delicious chocolate taste. You will have to be strong to stop at just one.
As this recipe serves 8, it could be a good opportunity to get some friends round, pop the kettle on and have a good catch up.
To add a delicious topping you could simply use a tsp of almond butter, your favourite chocolate, or get creative and add what you fancy; peanut butter and jam perhaps?

Pre heat your oven to 180C and line a muffin tin with 8 cases
Place all ingredients into a food processor and blend on high until smooth
Next pour equal amounts into each muffin case
Then put into the oven and bake for 15-20 minutes or until a toothpick comes out clean from the center.
N.B. This recipe makes 8 large muffins. Depending on your muffin case size it may make more.
