I have been working on this healthy blueberry pancakes recipe for weeks. The recipe took some time to perfect, but it’s finally here. As you can imagine transitioning a diet to one that contains no processed foods isn’t easy.
As a result it has been mentally challenging to say the least. I have used my imagination to create the foods I love from healthy, wholesome ingredients.
This pancake recipe is totally AIP compliant, meaning it is free from; gluten, dairy, grains, nuts, seeds, eggs, nightshades, refined sugar/oil, legumes, thickeners and non-nutritive sweeteners.
Plantains are members of the banana family, they are versatile in cooking and taste different at every stage of ripeness. They are a great carbohydrate source, which is perfect around exercise. Plantains are highly nutritious containing; vitamin A, C, B6, potassium, magnesium and iron which is great to add to a healthy diet. Additionally plantain is high in fibre, meaning they are great to regulate the digestive system. However they are not so easy to find in UK supermarkets, but are available in Asian markets.

Finally, this pancake recipe is very simple to make, great for breakfast, as a snack or pre/post workout. The pancakes even taste great after being stored in the refrigerator.
AIP, Paleo, GF, DF, Vegan
Firstly place all ingredients into a blender
Then heat a frying pan on high heat with a tsp of coconut oil
Next pour even amounts of pancake mixture into pan and fry each side for a few minutes. I made 5 pancakes
Lastly top with fruits, honey, yogurt or nut butter and Enjoy!
