These days many people have very busy lifestyles, leaving little time to prepare nutritious meals. One way to assure that you still eat a healthy, nutrient dense breakfast is to prepare in advanced.

As a Personal Trainer the majority of my clients say they struggle to eat breakfast. This either being due to time constraints or they don’t feel ready to eat. This banana bread is a perfect example, it contains slow release complex carbs, fiber, protein and healthy fats. It is ideal to pack in Tupperware to eat when you have time, on the bus/tube/train or at mid morning break.

Eat Anytime Of Day

You can eat this bread hot or cold, with or without a topping. The sweetness from the banana and blueberries means it tastes great alone. However, that doesn’t mean its not even better with some peanut butter and a hot cup of tea.

This bread is quite versatile, it’s great at breakfast, as a snack, dessert with some ice cream, or as a pre/post workout snack. What’s even better is, it’s so simple to make and can be stored in the fridge for a good few days (that’s if it lasts that long ha ha!).

Blueberry & Banana Bread

  • 60 grams Tigernut Powder
  • 80 grams Coconut Flour
  • 200 grams Fresh Blueberries
  • 240 grams Banana (2 LG bananas) + 1 to top
  • 2 medium Organic Eggs
  • 1 tbsp Maple Syrup
  • 1 tsp Baking Soda
  • 1 dash Sea Salt


  1. Pre heat your oven to 180C and line a loaf tin with baking paper

  2. Place all ingredients into a food processor, except for the banana to top and blend until smooth

  3. Pour all of the mixture into your loaf tin and place into the oven

  4. Bake for 45-50 minutes or until a toothpick comes out clean from the center.

  5. Leave to cool, slice and serve. Enjoy!
